Not Guacamole


I am really, really terrible at making guacamole.  It seems like it should be so easy, but somehow it isn't.  There was one time in college where I mixed the avocado with vanilla yogurt.  I . . . I don't  know what I was thinking.

I adore avocado and we get a lot of them in our CSA, but I am the only one who eats them, so it can be a challenge to use them all up.  Last week I tried mashing one and mixing it with breastmilk (as advised by my baby nutrition book) for G, but it was met with much the same response that the college concoction was.

So now, if I have not completely turned you off from avocado FOR LIFE, here's how I like it best:

Not Guacamole
diced red or green onion
10-12 cherry tomatoes, quartered
one avocado, cubed
juice from one lime
salt and pepper to taste
chopped cilantro (optional)

Toss all ingredients together (add some drained and rinsed black beans if you like) and serve with tortilla chips.  I may or may not have eaten this whole thing for lunch yesterday.
